Bitter Bialetti coffee is not automatically a sign of a poor brewer. Often, several factors come together: a dark roast, too much heat, coffee that is ground too finely, or residue from the previous brew. The best solution is therefore not a blanket new setting, but a brief troubleshooting process.

Describe the bitterness more precisely first
A dark coffee can have a pleasantly robust taste. It becomes unpleasant when a burnt impression, pronounced dryness, or a harsh aftertaste that lingers for a long time is added. Note what is actually bothering you. This helps distinguish the character of the roast from preparation errors.
Take a small sip after it has cooled slightly as well. Very hot coffee is difficult to assess. If it tastes noticeably drier and sharper when cooler, that is a different observation from a consistently strong but rounded cup.
Check the roast as a starting point
A very dark blend already has pronounced roasted flavors. If you generally do not like these, no stovetop setting can turn it into a mild, fruity coffee. So first check whether the coffee suits your taste at all.
A second roast suitable for Moka can help with comparison. Do not change all the settings at the same time. If the pot and preparation remain comparable, it is easier to recognize how much the beans contribute to the result.
Control the heat
A high heat setting is a common cause of a rushed brewing process. The pot should not be forced through the entire brewing process at maximum power. Choose a moderate setting and observe how the coffee rises.
Long, vigorous bubbling at the end is not a quality goal. Remove the brewer from the heat source in time and follow the instructions. If you use an adapter plate, you must also account for its stored residual heat. The cooktop setting does not always affect the pot immediately in this case.
Consider grind size and filling together
For Moka, you need a suitable grind size, not automatically the very fine setting used for your espresso machine. Coffee that is ground too finely can hinder the flow. Fill the filter funnel loosely according to the instructions; do not tamp the coffee grounds.
If you grind the coffee yourself, change the setting in small steps. A noticeably coarser trial can show whether the resistance was previously too high. Keep the correct filling level constant. Otherwise, you will not know whether the change came from the grind size or from a different amount of coffee.
Do not overlook old residue
Coffee residue in the filter, gasket, or riser tube can affect the taste. Check the accessible parts after the brewer has cooled and clean them according to the manufacturer's instructions. A dark coating should not automatically be regarded as a necessary flavor patina.
With aluminum and decorated models, aggressive cleaners are not a good shortcut. If you are unsure which care methods are permitted, follow the instructions for the specific brewer. Cleanliness and gentle treatment of the material are not mutually exclusive.
A simple comparison for tomorrow
Prepare the same beans with the correct filling and somewhat gentler heat. Only then assess the grind size. If the coffee still tastes too roasty, try different beans. This order saves you from unnecessary trials and prevents you from changing several causes at once.
If the flow remains noticeably abnormal despite correct use, or if steam escapes unusually, treat this as a functional issue. A damaged component will not be repaired by using different coffee. Let the brewer cool down and clarify its condition before brewing again.
Before your first coffee
Read the instructions for your specific Bialetti model. Size, material, and stovetop type must be compatible; the name of a design collection alone does not tell you anything about this. Before use, check the gasket, filter, and safety valve. Fill the water chamber according to the manufacturer's marking and keep the valve clear. The funnel should contain loosely filled coffee suitable for Moka. Do not compress it with a tamper.
Choose a heating surface that matches the base and use a moderate heat setting. With gas, the flame should remain beneath the base. Do not leave the brewer unattended, and open it only once it has cooled completely. Follow the care and cleaning instructions for the relevant model. Especially with decorated aluminum, aggressive treatment is not a shortcut to better coffee.

Frequently asked question
Should I immediately use a coarser grind for bitter Moka coffee?
Not automatically. First check whether the roast, heat, or old residue explains the impression. If you grind the coffee yourself, a small adjustment toward a coarser grind may be useful, but it should be made as a separate trial. Several simultaneous changes make troubleshooting more difficult.
